RIPE GRAPE

Ripe Rebula berries, heavy and poured with the warm light of the setting sun, are waiting for their hour to become a magnificent wine. Rebula or Ribolla is a white variete of Vitis vinfera. Originally from Greece but now you can find it in Italy and Slovenia country. The name also originates from Italy, since it was the Italian verb ribollire — to boil. Fermentation of this variety goes very explosively as boiling, with a large release of carbon dioxide CO2.
